Meet Dillon and Jess

Hey there! I’m Dillon Estrada, and alongside my better half, Jess, we make up the heart (and dough) of Pizzeria Fiamma.

My journey to the pizza oven has been anything but ordinary—from years spent in farming to working in chemical operations—but through every path, one joy remained constant: cooking.

What began in 2013 as a simple curiosity grew into a full-fledged passion by 2025. From weekend gatherings with friends to appreciation lunches for coworkers, each pizza shared strengthened the dream that would become Pizzeria Fiamma. With encouragement, dedication, and a deep respect for craft, that dream has become our reality.
